If you drive down Colfax, you’ve probably noticed that the restaurant and bar scene is changing a lot! Colfax isn’t the way that it was a just a few years ago… I don’t want to say how it was… but we all know what I mean. Today, when you drive down Colfax, for the most part, it is much cleaner and hipper. There are great little bars and restaurants around every corner, with patio dining, and each with a unique specialty.
The Irish Snug Denver invited us in to try some of their new craft cocktails, and a bit of food. We stopped by one evening, and parked on the street outside. The Irish Snug has a super warm, and cozy vibe inside, while still feeling classy enough for a date night. It felt like the kind of place where you go once a week, or something; other people must feel like that too, because while we were there we noticed plenty of “regulars” coming in. During the hour that we were there a TON of people coming to get food to go too. In a city center, so saturated with good food, seeing people who obviously order take-out on a regular basis is a great sign.
The Irish Snug just started a line of craft cocktails, and we were ready to drink up! These craft cocktails include some awesome drinks filled with boozy goodness and homemade syrups! The menu is impressive, showcasing that this particular pub can produce more than just Guinness for the cooler Colorado months (and I’m looking forward to their Spring and Summer menus too!) The winter menu has over 20 drinks to choose from, including;
Oak Mule- Absolut Oak Aged Vodka, lime, and ginger beer
Chocolate Martini- Breckenridge Vodka, white Creme De Cacao, and milk
Irish Coffee- Paddy’s Irish Whiskey, brown sugar, hot coffee, and whipped cream
Wooden Echo- Jameson Caskmates Whiskey, balsamic syrup, orange bitters, and chocolate bitters.

The drinks are incredible, and this is coming from a person who doesn’t enjoy alcohol at all, me! I can’t stand drinking, which is why I took Jason with me, but somehow I ended up drinking more than one sip of each drink, because they were just so tasty.
I think my personal favorite was the Ginger Soother, bizarre because I hate hot drinks, ginger, and alcohol, this drink is all of these things, and it’s incredible! In fact, writing about it is making me want one! It is Monkey Shoulder Scotch, house-made ginger syrup, lemon, honey, cloves, and hot water. It is so yummy!
At the time of publication The Irish Snug has 4-stars out of over 300 reviews on Yelp, which is something we always check. Those 4-stars are well deserved. The food is definitely worthy of a date night too! We will be back again, really soon, which speaks volumes about the food, and drinks!
Jason had the traditional Corned Beef and Cabbage, and I had the Irish Cheddar mac-and-cheese. The mac-and-cheese was incredible! It was so, so good. It was creamy, and had a little bit of spice, it wasn’t oily or greasy at all, it was just great!
